The color comes from parsley, coriander and fenugreek fried down until they are almost black — that slow frying is the whole dish, and it is why no two households make it the same. The sourness is dried lime, limoo amani, which goes in whole and is pierced so it can leak into the pot. Ask Iranians to name their favourite dish and this is the one that keeps winning.
